Here's an interesting bloodwork comparison, from an extreme dieter, a female now in her late 20s. She was a strict vegan for six years; now she has been a strict carnivore for five years. She reports various mental and physical health benefits from the switch.

Most doctors today will focus on total cholesterol values and calculated LDL values and say that the values on the left are what you want. Decades of compromised medical studies and conclusions have led them to myopically think this way. As a result, most doctors will simply ignore the desirability of several of the values on the right. My doctor, whom I rarely see, thinks this way. She operates in the safe space of medical conformity.
Specifically, there is great vascular benefit to having high HDL and low trigs, as well as a lower A1C. It is also better to have a lower fasting glucose level, and to be higher in vitamin D and vitamin B12. The very low hs-CRP value indicates low inflammation and a low risk of coronary artery disease.

I tend vegans are less likely to leave me alone than vice versa. I was at college with one. He would never shut up about what I was eating at lunchtime. I didn't stay in contact after we left.

I find that a bit comical. I stated in this thread I was a vegetarian and I think it was healthy for me. As a consequence I was directly insulted and then several people came out of the woodwork to mock anyone that doesn't eat meat.
Everyone can eat whatever they want. I really don't care. However I strongly think that God wants us to be wise in how we treat our food. The current western way of doing food is anything except wise.

I have a good part of my working life in these types of buildings. Five years in a flour mill, 14 years in a chocolate factory and 11 years in cheese/dairy/butter factories.

My approach will be to start off by first eliminating meat from my diet but still consume animal products such as eggs and cheese. If I am successful here I will consider removing the animal products. My problem is that I am married to a genius in the kitchen and never bothered to learn how to cook for myself. Yesterday I cooked some oats for breakfast and for dinner I made a brown rice and chick pea dish. It was actually quite good and I had fun preparing the meals.
