Most Khazars never converted to Judaism and Ashkenazi don't resemble Turkic Khazarian culture either. The Khazars were a martial race, in love with their horses, outdoor sports and foraying out on the open plains. They were also given to bright clothing and jewellery. The Ashkenazi were an urban people, devoted more to books and finance... who spoke a western German dialect and were indoors types, given to wearing drab dowdy colours. Generalisatons of course. There were a variety of types in their empire, but the Turkic rulers would have had a more Oriental look with epicanthic folds on their eyes and flattish noses, not exactly the Ashkenazi hook nose stereotype. Some pictures of Turkic peoples from the former USSR: The Jewish settlements of the Roman Empire in southern Germany and Austria are more likely the origin of Ashkenazi. Vienna among these, the former Vindobona. That population was always urban, in contact with early German speakers. They shared the Pale with the one time Khazars, but if you read the records, this population originates from when King Stanislaw of the Poles invited them eastward into that area.

Yes, more like Mongols and the Central Asian peoples. Proper nomads as opposed to "mobile" people as the Ashkenazi often were.
