Animal flesh is meant to be a backup source of nutrition and not just a seasonal thing. Winter and times of famine are typically times when plants are not available so one may have to resort to animal flesh for sustenance. In our modern age, however, we can get access to the plants, fruits and grains the Word of Wisdom says that God ordained for our "constitution", "nature" and "use" year round, making the need to take animal flesh unnecessary for most people.
There are still places in the world where this access is not available and so using animal flesh is necessary and pleasing to the Lord. I think the case is clear though that wasting flesh where there is no genuine NEED is not pleasing to the Lord.

Read Leviticus 17. I have a sneaky suspicion that sacrifice in ancient Israel actually may have had a lot to do with the sanctity of life. I think among other things (like about Christ) the Lord used the principle of sacrifice to teach Israel about how sacred life is by having them kill those things they would eat at an altar. Eventually this became "the temple" altar once the high places were removed and worship was consolidated at the temple. Interesting stuff to think about. I eat a little protein every day, and my wife cooks vegetables amazingly. Roast them. A little olive oil and some salt and pepper, then throw them in the oven til they begin to brown. Oh my goodness. I never loved vegetables….and now
