This past time through reading the Book of Mormon I made a concerted effort to write down every record mentioned by Mormon/Moroni/etc that served as source material for the BoM and/or would have been in the collection of Nephite records hidden by Ammoron/Mormon. I've undoubtedly missed some, and am not entirely finished (on Ether 2) but I don't think there are many more records mentioned and wanted to get my list out there.
If anyone knows of any records mentioned in the BoM that I missed, please post letting me know (with references if you can)- I'm trying to get this list to be comprehensive because tha would be COOL!
I have included dates when they could be roughly estimated from the BoM evidence, but am not so worried about them (math is my weak point anyway).
Starting from 1 Nephi 1:1:
-The Brass Plates (containing, among other things, the prophecies of Isaiah, Zenock, Zenos, Jeremiah, and a genealogy of certain Jewish families including Lehi's). First mentionted in 1 Nephi 3. Origin unknown.
-The Plates of Nephi (Large plates containing a detailed political history of the Nephites; Small plates containing the prophecies and significant religious history of the Nephites to the time of King Benjamin). The Large Plates were begun ~589 B.C., while the small plates were beging ~570 B.C. Written by Nephi 1. The Large plates was the source material for the Book of Mosiah, a direct translation of the small plates rendered 1 Nephi through Omni.
-Lehi's writings (probably quoted in the 116 pages of the lost manuscript). Mentioned in 1 Nephi 1:17. Written by Lehi.
-The Stone of Coriantumr (containing an account of his life, a brief history of the Jaredite people). Mentioned in Omni 1:20-21. Probably written by Coriantumr or a royal scribe.
-Mormon's abridgement of the large plates of Nephi from Nephi 1 to King Benjamin (consisting of the lost 116 pages of the BoM manuscript). Mentioned in Words of Mormon 1:3. Written between A.D. 326-385.
-The Record of Zeniff (containing an account of the Zeniffites, who possessed the land of Lehi-Nephi for a time). First mentioned in Mosiah 8:5 and the source material for Mosiah 9-22. Begun by Zeniff ~160 B.C.
-24 golden Jaredite plates (containing a history of the world from the time of Adam, and a history of the Jaredites). The source material for the Book of Ether; found by a Zeniffite expedition (Mosiah 8:9). Written by Ether.
-Alma the Elder's account of Abinadi's words (probably the source of Abinadi's direct quotation). Mentioned in Mosiah 17:4.
-Alma the Younger's record (called "the record of Alma" in Mormon's introduction to the Book of Alma). Kept by Alma the Younger, beginning about 91 B.C. and ending 73 B.C. The source material for the Book of Alma chapters 1-44.
-Helaman the Elder's record. Kept by Helaman the elder and his brother Shiblon, probably on the same plates as Alma the Younger's record. Beginning 73 B.C. and ending 52 B.C. Source material for the Book of Alma chapters 45-63.
-Ammoron and Cptn. Moroni write re: prisoner exhange- source for Alma 54.
-Cptn. Moroni and Pahoran write re: king-men and the war- source for Alma 60+61.
-Helaman the Younger's record (called the "record of Helaman" in Mormon's introduction to the Book of Helaman). Kept by Helaman 3 (grandson of Alma the younger) and his sons, beginning about 52 B.C. and ending 1 B.C.
-The record of Nephi 3, which is the source material for the book of Third Nephi. Began about 1 B.C. and ended A.D. 34-35.
-The record of the Brother of Jared, which contained the things he saw and heard atop Mount Shelem (see Ether 4:1). Among other things this contains what would amount to the clearest and most precise written revelation on the history of the world known to mankind, and when found and translated will be greater than the Book of Mormon in its doctrine, importance, etc.
-Various records kept by the people throughout the time span of the Book of Mormon (mentioned in Helaman 3:13-14, 3 Nephi 5:9, 3 Nephi 17:15-17, and surely many other places). These serve as second witnessese to the events of the Book of Mormon which, when finally found, will undoubtedly help to fill in gaps and answer questions regarding the events of the Book of Mormon, as well as expound on the doctrine contained therein.

Great work on putting this together. The only thing I would add are the records of the Sons of Moisiah.

You can really imagine how much work this was for Mormon to compile all these records and edit them into the Book of Mormon. It truly must have been his life's work.
