Literally we don't know that and I frankly don't think it matters at all. There are 1000's of possibilities here and I will just list a few.

1. JS could have not died, but been very close in a suspended state of animation.
2. JS could have been replaced with a duplicate.
3. JS could have faked his death.
4. Everything we know about JS could be totally wrong.
5. JS could be a robot that never was alive in the first place.

Jehovah’s calling his servant “Israel” parallels Jehovah’s calling his people’s ancestor Jacob by his new name Israel after Jacob had proven loyal to him (Genesis 32:28). The servant’s receiving a new name, in other words—which the name Israel here symbolizes—attests to his ascent to a higher spiritual level after he has proven loyal to Jehovah. It also implies that he—Jehovah’s individual servant—serves as a surrogate of and as an exemplar to Jehovah’s collective servant; that is, to Jehovah’s people in the Jacob/Israel category to whom Jehovah sends him (vv 5-9; Isaiah 41:27; 42:6-7; 48:16).

One way the servant proves loyal is to continue laboring in Jehovah’s cause even in the face of few positive results. By all appearances, he at first spends a great deal of energy “in vain” and “for nothing and to no purpose.” And yet, desiring to serve Jehovah even under the most adversarial conditions (v 7; Isaiah 50:6-9; 52:13-14), he submits to Jehovah’s will: “My Lord Jehovah has endowed me with a learned tongue, that I may know how to preach to those grown weary a word to wake them up” (Isaiah 50:4). Before ascending to Isaiah’s seraph level, he descends through trials that consume him.

5 For now Jehovah has said—
he who formed me from the womb
to be his servant, to restore Jacob to him,
Israel having been gathered to him;

for I won honor in the eyes of Jehovah

for you to be my servant

A reversal of circumstances takes place for Jehovah’s servant when the trials he endures have served their purpose to purify, perfect, and sanctify him to a higher spiritual level, thereby qualifying him for a new commission. Jacob/Israel’s restoration, to which task he was foreordained (v 1), Jehovah augments with a mission to serve as a light to the “nations” or “Gentiles” (goyim) “to the end of the earth.” From there, Jehovah’s people are to return (Isaiah 41:8-9; 43:5-6), so that all who desire it might participate in Jehovah’s salvation and prepare for Jehovah’s coming as salvation (Isaiah 52:7; 62:11).

Jehovah “appoints” his servant when he “wins honor” in Jehovah’s eyes by proving faithful through trials (v 4), at which time his God becomes his “strength.” The servant’s physical exploits that follow—subduing nations, releasing captives, leading the new exodus, and rebuilding ruins (Isaiah 9:2-5; 11:10-16; 41:2-3, 25; 45:1-3, 13; 48:14; 61:1-4)—should thus be seen in the context of an ascent phase of divine empowerment that follows his descent phase through afflictions as he fulfills his role of proxy savior to the Jacob/Israel category of Jehovah’s people under the terms of the Davidic Covenant.

the reason that you don't see any gathering yet is because we are not the ones that will be doing the gathering.
That mission is reserved for the Lord's end-time servant - the Davidic servant,
who by the way, is the "angel ascending from the east" in Revelation 7:2,

The "little book" was his mission, he saw

He is both the angel of His Presence and Elias who announces the Lord.

then WHY doesn't the Lord say "servants" - (plural) - instead of servant -
like He does in verse 1.

Jehovah’s appointing his servant as a light to the nations leads to a new exodus or to captivity.

At first directed to the Jacob/Israel category of Jehovah’s people dispersed among the nations (Isaiah 11:10-12; 41:8-9; 43:1-8; 49:8-12), the servant’s task is to bring as many as will repent to renew the covenant with Jehovah and to ascend to higher spiritual categories (v 21; Isaiah 44:1-5, 21-22; 45:19-25; 46:12-13).

YES, there will be many, as there are already many now, that serve the Lord,
so they are His servants.
You, and even I, could be one of these end-time servants that have a mission and play an important role;
the Lord has a plan and a mission for anyone that serves Him,
but it's just not the same, as the Lord's one and only end-time Davidic servant and his mission or missions,
and that He empowers and works through and that we should be looking for.

Studying D&C 113 makes it plain that:

The stem: Christ
The rod: Joseph Smith
The root/branch: A future servant
  • “A shoot [rod] will spring up from the stock [stem] of Jesse and a branch from its graft bear fruit.” (Isaiah 11:1, Gileadi Translation)
According to this, a rod will spring up from the stem, or, in other words, will be descended from the stem. Joseph Smith was a descendent of Jesus Christ. As for the root/branch, it says that it will be grafted in to the rod—implying adoption, rather than natural descent. Is there a line of adopted descendants of Joseph Smith, having the birthright of Joseph Smith, which will eventually give birth to this man?
  • “Behold, thus saith the Lord, it is a descendant of Jesse, as well as of Joseph, unto whom rightly belongs the priesthood, and the keys of the kingdom, for an ensign, and for the gathering of my people in the last days.” (D&C 113:6)
The answer is yes.

I have written 10 pages on why the servant that Isaiah is writing about is not a singular individual just as the woman or virgin often is not. The prophets often use a singular form to represent the many or a people, depending on the "role" of the people the prophet want to illustrate or address. The name of Jacob or Israel is often used to represent God's people in different time periods and not the ancient singular individual with the same name, Isaiah himself does this. Do Jacob or Israel the singluar individual walk the earth again in the last days according to Isaiah or is he writing about God's chosen people in the last days? Amazing that it is so difficult of a concept.

I get what you're saying, but I think the difference here is that they are proper names. So Jacob was a real person and Jacob was his name. Just as I bear the name of my father, Jacobs people bear his name and can, in this context, be collectively referred to as "Jacob".

However, with the end-time servant, we are describing a title or position. We don't have a name for this person, just a role.
So there is a distinct difference in my view.

Two anointed ones
Two staves
Two olive trees
Two sticks
Two goats
The Brand and the Branch
The stay and the staff
The Rod and the Root
The prophet and the priest
The Seer and the Spokesman

I agree that there will be more than these two, but these two are the heads of each of their kingdoms, the northern and southern. When the two kingdoms join (Ezekiel 37), the two staffs of leadership will join and become one in the hand of the Davidic prince.
